s'more cookies


Ingredients:
cookies:
280g plain flour
1 tsp bicarbonate of soda
1 1/2 tsp cornflour
1/4 tsp salt
170g unsalted butter
135g light brown sugar
100g granulated sugar
1 large egg
1 egg yolk
2 tsp vanilla extract
180g semi- sweet chocolate chips

toppings:
100g semi-sweet chocolate
2 graham crackers, broken into pieces
1/2 cup mini marshmallows

Method:
1. mix together the flour, bicarbonate of soda, cornflour and salt in a large bowl. set aside.
2. in a medium bowl, whisk the melted butter, brown sugar and white sugar together until no lumps remain. whisk in the eggs, and vanilla. pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula, the dough will be very soft, yet thick. fold in the chocolate chips .
3. cover the dough and chill in the fridge for 2 hours or up to 3 days, chilling is mandatory.
4. preheat oven to 163 C, line two baking sheets with parchment paper or silicone baking mats.
5. roll the dough into balls, about 3 tbsp of dough each, the dough will be crumbly but with the warmth of your hands it will help the balls stay intact. place 8 dough balls onto each baking tray, bake the cookies for 10 minutes, remove the cookies from the oven and press some of the topping into each cookie, place the cookies back into the oven for another 2 minutes.
6. you can turn the broiler on for the last 30 seconds to toast the tops or use a kitchen torch once out of the oven.
7. allow the cookies to cool on the cookie sheet for about 10 minutes before moving to a wire rack to cool completely.
