smore bites

Ingredients:
110g unsalted butter
1 1/4 cup mini chocolate chips
1/2 cup sugar
2 large eggs
2 tsp pure vanilla extract
1/2 cup plain flour
1/2 quinoa flour
3/4 cup mini marshmallows
1/4 cup graham cracker crumbs.





Method:
1. put the oven to 180degrees C. line a 24 mini muffin pan with paper lines.
2. heat the butter in a small saucepan over low heat. remove from the heat and add in 3/4 cup chocolate chips. stir until the chocolate melts and forms a smooth mixture. transfer into a glass bowl and stir in the sugar, eggs and vanilla. gradually beat in the flour until the mixture is thick and smooth. stir in the remaining 1/2 cup mini chocolate chips.
3. fill each cupcake liner with 2 heaped tbsp of batter. push 3 mini marshmallows halfway down and then sprinkle 1/2 tsp graham cracker crumbs over the marshmallows. bake until the marshmallows are puffed and light golden. about 10 to 12 minutes. cook and serve
