smore churros
Ingredients:
1 cup plain flour
1 cup water
2 tbsp butter
1 tbsp brown sugar
1 1/2 tbsp ground cinnamon
1/2 cup sugar
2 eggs
3/4 cup chocolate, chopped
1/3 cup double cream
1/2 tsp cayenne powder
pinch of salt
oil for frying
Method:
1.in a bowl, mix together the flour and 1/2 tbsp ground cinnamon. in a saucepan, heat water, butter and brown sugar and salt until simmering. add flour mixture and stir until a dough ball forms and pull away from the saucepan. set aside to cool. Transfer the dough in a mixing bowl, slowly mix to incorporate one egg at a time.
2. transfer the dough into a piping bag with a star tip attached. on a greased baking sheet pipe the dough into discs using a spiral motion. place into the freezer for about 20 minutes
3. heat the oil, gently place two disks at a time and fry until golden brown. remove from the oil and drain on paper towels.
4. combine sugar and the remaining ground cinnamon in a bowl, toss in the fried churros until lightly coated.
5. for the chocolate sauce, melt the chocolate add cayenne powder and stir in the double cream until well combines.
6. roast marshmallows over a flame, top on churro and drizzle the sauce on top.
