banana coconut cream parfaits



Ingredients:
1 1/2 cup part-skim ricotta cheese
1 cup fat free cottage cheese
113g neufchatel cheese
2/3 cup canned coconut milk
1/2 cup of icing sugar
1 tsp of vanilla
2 large bananas, sliced into 24 slices each
1/2 cup of sweetened coconut, toasted
15 vanilla wafers, crushed into crumbs

Method:
1. to the bowl add all the cheeses and coconut milk, mix on high until very smooth. add icig sugar and vanilla and pulse until incorporated. taste and mix until incorporated and adjusted to your taste.
2. have all your ingredients out so that you can easily assemble the parfaits easily, gather 8 parfait containers, i used 1/2 pint mason jars because i love having lids of each parfait.
