baked fudge

Ingredients:
2 large eggs
1 cup sugar
2 tbsp cocoa
2 tbsp plain flour
50g butter, melted
1 tsp vanilla extract


Method:
1. preheat the oven to 180 degrees C
2. beat the eggs until light in colour, beat in the sugar until just combined. add the cocoa, flour, melted butter and vanilla extract and gently mix well until combines.
3. pour the batter into 4 ramekins, set the ramekins in a larger pan and fill the pan halfway full of water
4. bake until the upper crust is crispy and rest of the batter is firm but not set, ( 40 - 50 mins) if you pull it out of the over and have second thoughts put it back for another 10 minutes

serve with whipped cream or vanilla icecream
