MICROWAVE Chocolate & Coconut fudge

coconut and chocolate fudge








































Ingredients:

1 tin condensed milk
420g Castor sugar
125g unsalted butter
6tbsp cocoa powder
500g coconut designated
1 tsp vanilla essence

Method:

1. grease a baking tray.
2. blend the condensed milk, sugar and butter in a deep microwaveable bowl (plastic or glass). microwave for 2 minutes at 100% power. stir well.


3. stir in the cocoa powder, coconut designated and vanilla essence.


4. microwave for another 10 minutes on 100% power but do not leave the bowl unattended as the mixture boils over easily. ( to prevent this give the mixture a quick stir every  time it boils to the top of the bowl.


5. pour the mixture into the prepared baking tray. cool and cut into squared.



makes around 40 1cm x 1cm squares
